I'd like to know whether I could "setup" mail alerts for certain tags.
For example, if someone asks a question with a tag [support] or [java], I'd like to receive a notification. 
Other people might like to receive alerts for [human resources], and so on.
 
Is it possible today?

Yes, but the users must select specific tags as "interested" or "subscribed" and configure their alerts to be filtered by the selected tags only.
 
If you enable the "subscribed" tag set, it is also possible for the admins to set up subscriptions via the tags page.
